Black Bean Burgers

I didn’t have any buns!! It’s an open faced burger, but feel free to imagine buns in there if you want? (How do you say buns without sounding silly?…)

If you were to ask me what dish I’d serve to a group of non-vegetarians on #MeatlessMonday, this would be the crowd-pleasing choice. As a vegetarian, sometimes people think you need to compromise on flavour because you don’t have meat. This could NOT be further from the truth, and this recipe is proof of that. Usually when I serve this to friends or family members, the next time I’m cooking, they’re asking me to make it again.

More proof of how delicious this dish is- I told my dad I was making them for dinner and he conveniently stopped by the house to eat one (literally 20 minutes after our phone call he was at my door)… Can’t blame him, it’s one of my favourite meals to make for myself too :).

INGREDIENTS (makes 4 palm sized patties):

  • 1/4 – 1/2 red onion (you can also go with traditional white, whatever you prefer)
  • 1/2 cup of corn (this is more for the taste, less for the nutritional value, because we all know how well corn digests…)
  • 1 egg
  • 1 cup bread crumbs (I made my own by grinding up crackers, but you can buy from the store)
  • 1- 540 ml can of black beans
  • ~3 tablespoons of coconut oil to fry patties
  • Condiments of your choosing, I used:
    • Pickled beets
    • Avocado
    • Green Salsa
    • Cheese
    • Dijon Mustard

  1. Drain beans, put in a bowl and slightly mash them with a potato masher. You don’t want to make a puree, you just want them a little squished.
  2. Cut up the onion, and place it into the bean bowl. Add the corn, breadcrumbs and beaten egg as well. It should look like this prior to mixing:Bean mixture
    • To make your own bread crumbs like I did, you just put a few dry crackers (I used these) into a coffee grinder and blend, or use a potato masher, like below:

  3. Mix the ingredients in the bowl until it looks like this:Black Bean Bowl
  4. To cook these bad boys, grab a frying pan, add about 3 tablespoons of coconut oil and set to medium heat.
  5. Make 4 equal sized patties with your hands.
  6. When the frying pan is hot enough, add the patties and fry until browned. Flip over and brown the other side (should be about 5-7 minutes/side). ONLY flip the patties once, this mixture has a lot of moisture in it and can fall apart if you’re not careful, so be patient :P.
    • TIP – If you plan to make a heartier patty, just make sure you’re giving it enough time to cook all the way through. There is egg in this recipe so you want to make sure you’re not leaving them raw. My patties are probably about 1/2-1 inch thick once they’re cooked down.

  7. You can put these patties into a burger bun, and dress them up like a traditional burger, or do what I did (because I had no bread in the house) and make a burger bowl. They’re delicious either way 🙂
