I just love carrot cake, and now with this smoothie from our book of the month, Joyous Health, I have a healthy, dairy and gluten free way to get that same taste!
- 2 pitted medjool dates (I have also used a banana instead when I was out of dates)
- 1/4 cup shredded carrots
- 1/4 cup hemp seeds
- 1 scoop vanilla protein powder (I used Vega)
- 1 tbsp raw honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves (I didn’t use this because I didn’t have any, but it still tasted amazing without!)
- 1 cup ice water
- coconut milk, enough to cover dry ingredients (I used almond milk instead)
Place all ingredients in a blender and blend until fully combined.
