I didn’t have any buns!! It’s an open faced burger, but feel free to imagine buns in there if you want? (How do you say buns without sounding silly?…)

If you were to ask me what dish I’d serve to a group of non-vegetarians on #MeatlessMonday, this would be the crowd-pleasing choice. As a vegetarian, sometimes people think you need to compromise on flavour because you don’t have meat. This could NOT be further from the truth, and this recipe is proof of that. Usually when I serve this to friends or family members, the next time I’m cooking, they’re asking me to make it again.

More proof of how delicious this dish is- I told my dad I was making them for dinner and he conveniently stopped by the house to eat one (literally 20 minutes after our phone call he was at my door)… Can’t blame him, it’s one of my favourite meals to make for myself too :).

I like to make this parfait either for breakfast or as a quick snack. It’s so simple to put together and the different flavours and textures (sweet from the vanilla yogurt and blueberries, crunchy and salty from the granola) means it fulfills a lot of cravings all at the same time, while also being pretty healthy.

Blueberry and Banana Smoothie Recipe

Blueberry Banana Smoothie

Drank it so fast, almost didn’t take a picture…

Just in case you weren’t getting enough smoothie recipes, here’s another one, this time with a kick of antioxidants from the delicious frozen blueberries. You’ll start to notice that most of my smoothies will either have spirulina or hemp seed in them. If you’re looking to experiment with smoothie making, I would suggest grabbing one or both of these ingredients. I like to think of them (and bananas…) as my base because they’re fairly tasteless– in a good way because you can add them to anything — but add an extra healthy bonus, either through additional protein, nutrients or a detoxifier.

Easy Peanut Butter and Banana Smoothie

banana peanut butter smoothieThis combination is one of my favourites, it’s basically a dessert smoothie, because it’s savoury and sweet, while also being pretty healthy. I drink it in the morning or as a snack and it’s great way to start the day for vegans/vegetarians because you’re getting a bunch of protein from the peanuts and hemp seed — Hemp seed protein is easy to digest, contains all known amino acids as well as a bunch of other goodies for you like magnesium, iron etc. (click here for more nutritional facts) so I love adding it to my smoothies for an extra kick of goodness.

Again, like most of my smoothie recipes, this is for one serving (a full mason jar), but feel free to modify to make more 🙂

Smoothie Recipe: Mango-Banana Medley

I picked up some frozen mango this week and have been making this smoothie in the mornings before I head to work. It’s very easy and quick. You could even prep most of it the night before and just add the almond milk and blend when you wake up. It has lots of protein, potassium, magnesium among other things to start your day off with thanks to the spirulina and hemp seed – we can talk more about why those are so great in another post!

This recipe is for one serving, but if you wanted you could double/triple/quadruple it up and have smoothies for two or more.
